I love a good sale and even though Trader Joe's is my main, certain things I look to Kroger or other stores for because let's face it: Trader Joe's has pretty great prices, but I have NEVER known them to have a sale. I'm pretty sure that's not their thing. I was browsing the Kroger sales ad last weekend and saw that they had a 5-lb bag of potatoes for $2.50! I rarely buy potatoes because it's hard for me to use them up before they go bad, as I'm more of a rice gal. BUT for that price, I decided I had to get potatoes that week. So, naturally, I had to come up with ways to use them before their expiration. Thus, I present to you: exhibit B. Exhibit B because the first thing I made with them was cabbage soup, which was okay, but nothing really to share with the world. This soup, though? I had to share. Let me know if you try it and love it as much as I do! Yep, I said it and am shameless about patting myself on the back for this soup :-) You will need: 2 tablespoons olive oil, divided 1 pound chicken breasts 3 bugs bunny carrots 8 stalks of celery 10 scallions (green onions) 3 cups chopped cremini mushrooms 3 red skin potatoes 5 cups low sodium chicken broth 2 cups frozen chopped spinach 1/2 tsp powdered ginger 1/4 tsp smoked paprika 3/4 tsp table salt, divided +1/8 tsp 1/2 tsp garlic powder black pepper to taste red pepper flakes to taste 1 tsp rice vinegar sesame oil (individual bowls)
I intended to put corn in this soup, but forgot until right at the end after everything else was hot. Next time, though! However, I did enjoy some cornbread with it. I may share that recipe later. Check out these recent posts:

Delicious!!! I love potato soup but have never made it with chicken -your recipe takes it to a whole new level - love the smoked paprika in it
